Ingredients

  • 1 lb 450 g boneless chicken thighs (dark meat preferred; white meat optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp sea salt
  • ½ cup sweet teriyaki sauce
  • 1 tbsp sesame oil
For the Vegetables:
  • 2 cloves garlic sliced into ¼-inch strips
  • 1 medium sweet onion sliced into ¼-inch semicircles
  • 1 medium red bell pepper sliced into ¼-inch strips
  • ½ tsp sea salt
  • Optional sliced chili peppers, habanero, or jalapeños for spice

Method

  1. Step 1: Season the Chicken – Mix garlic powder, onion powder, basil, thyme, and sea salt. Pat chicken dry and coat both sides evenly with the seasoning.
  2. Step 2: Add the Teriyaki and Marinate – Brush sweet teriyaki sauce over the chicken and place in the fridge for about 1 hour.
  3. Step 3: Prep the Veggies – Slice onion, red bell pepper, and garlic. Slice chili or jalapeño if using.
  4. Step 4: Sear the Chicken – Heat sesame oil in a pan over medium-high heat. Cook chicken 3–4 minutes per side until golden.
  5. Step 5: Flame or Broil for Smoky Flavor – Use a kitchen torch or broil in oven 1–2 minutes per side for a flame-broiled finish. Let chicken rest.
  6. Step 6: Sauté the Veggies – In the same pan, cook onion and bell pepper until soft, then add garlic and salt.
  7. Step 7: Plate and Serve – Serve veggies first, place chicken on top, and drizzle extra teriyaki sauce if desired.
