Preheat the oven to 350°F.
In a small bowl combine 1/2 cup brown sugar, 1/2 tsp red pepper flakes (or up to 1 tsp), 1/2 tsp black pepper, and the pinch of cayenne. Stir until evenly mixed.
Line a baking sheet with foil or parchment. Put a wire rack on the sheet. Lay bacon strips in a single layer across the rack (no overlap).
Evenly spread the brown-sugar mixture over the top of each bacon strip. Press lightly so the sugar mixture adheres.
Put the sheet in the 350°F oven. Bake 30–45 minutes, watching toward the end. About 30 minutes yields a chewier result; 40–45 minutes gives crispier, caramelized bacon. Check at 25–30 minutes and again every 5–10 minutes after that to avoid burning.
Remove from oven and let bacon rest on the rack for a few minutes so the sugar firms up. Transfer to paper towels briefly if you want to drain excess fat.
